In the words of Apex Coffee Imports: "This blend is made up of day lots from several small holder farmers who live near the town of São Bartolomeu in Mantiqueira de Minas, Minas Gerais. Each lot is hand harvested and dried on concrete patios at each individual farm. Once the coffees are dried, they are gathered and packed in plastic sacks and stored until they are moved to the dry mill for further processing. This area is the most mountainous in Minas Gerais and the higher altitude leads to slower maturation of cherries for increased complexity and better structure in overall flavour profile when compared with blends from larger agri-business farms in other parts of Brazil."
